Zucchini Boats
These are a big family favorite lunch! In order for this to be a dinner for my family I would have to make entirely too many. They are a nice veggie lunch or even a side dish.
ingredients
- 6 Zucchini
- Olive oil for brushing
- Salt and pepper to taste
- Garlic powder
- 36 Grape tomatoes
- Breadcrumbs, plain or seasoned (optional)
- 2 cups of your favorite Cheese (ie Mozzarella, Cheddar, etc)
directions
- Preheat oven to 350
- Slice Zucchini in half length wise
- Using a regular spoon, scoop out seeds same as you would the spaghetti squash, they now look like boats http://crazylittlethingcalledfamily.blogspot.com/2014/12/italian-sausage-enchilada-spaghetti.html
- Place zucchini boats on a baking dish with a lip, or another dish underneath to catch the oil drippings
- put a good dollop of olive oil in a small bowl, brush oil over zucchini
- Lightly sprinkle zucchini with garlic powder, salt, and pepper
- Slice tomatoes in half and place inside the hollowed out centers of zucchini
- take a pinch of bread crumbs and sprinkle across zucchini and tomatoes. The bread crumbs really do add a nice something extra but are optional
- Bake for 30 minutes. Zucchini will be soft but still firm enough to hold shape
- Add your favorite cheese. I prefer Mozzarella while my husband loves Cheddar.
- Put back in the oven under the Broiler for a few minutes while the cheese melts and browns. You do need to let it cool for a few minutes before eating or risk burning yourself good! lol
